It is commercially prepared by neutralizing lactic acid with calcium carbonate or calcium hydroxide. Calcium lactate, known with the code E327, is used in the production of cheese, ice cream, soup and baking powder.
It is generally used in the food industry to balance the structure of vegetables and fruits (especially potatoes) during the processing process. It also has antioxidant activity.

It is evaluated according to the source of lactic acid used in the production of calcium lactate. As long as lactic acid is not obtained from animal-derived products, we can say calcium lactate is vegan.
